Familia Cofiño - Anaerobic Natural Lot 🇬🇹
The Cofiño family has owned their farm - Finca Retana since 1932. The farm is cultivation a whole 62,5 hectares of coffee plants, and is home to 20 workers-families giving them free housing and education! When you dig through their approach to farming, you see a lot of effort going into having a healthy soil and environment around the operation of this shear size. The grow a lot of tall canopy trees and keep a healthy ground cover, and this is important to future proof themselves.
The coffee we have bought from them is of the caturra varietal. It was handpicked and sorted for ripeness. Then it was fermented in cherry in a closed environment, afterwards dried outdoors with an innovative technique called sleeping bag. The technique uses a material resembling a sleeping bag and switches between enclosing the cherries and opening up, giving the coffee waves of drying and waves of moister retention. This extends the fermentation process and breaks down more of the sugars in the coffee seed making it extremely fun for us to play around with when roasting🥳
The result is a nice and fruity coffee with deep sweetness reminding us of red-cherry-chocolate and marzipan. Not bad right? We’re honored to offer such great coffee of the impressive family Cofińo.
