Danny Joel Pastana is the owner of the farm La Libertad since 2015, located in the district Mozonte in Nueva Segovia, Nicaragua. He comes from a family of coffee farmers and has really showed his passion and promise to the future of coffee farming. Only 16% of his land is used for cultivating coffee and most other parts is used to raise healthy diverse forrest. On the farm you will see a lot of native wild animals and plants enjoying his sanctuary.

Danny has been competing in the the Cup Of Excellence for many years now and is quite stable in producing high quality lots that goes really high up on the score board🏁🏆

The coffee lot we bought from him is of red catuai and caturra varieties. It was handpicked and sorted for ripeness. Then it was fermented in cherry in a closed environment, afterwards dried outdoors with an innovative technique called sleeping bag. The technique uses a material resembling a sleeping bag and switches between enclosing the cherries and opening up, giving the coffee waves of drying and waves of moister retention. This extends the fermentation process and breaks down more of the sugars in the coffee seed making it extremely fun for us to play around with when roasting🥳

Our result? A big fruit punch of passionfruit, honey and nectarine. We enjoy roasting this coffee, and we think you will enjoy drinking it. Cheers to Danny and his farming excellence!
